Hello & Welcome


Hello, and welcome to both my very first blog and my very first post. For years now I have been reading various blogs and my husband has been nagging me to set one up myself..  Today my car is in for its MOT and therefore I am at home with my time on my hands.  What better time to set up my blog?

This week I am on annual leave from my very busy 12 hours a day, six days a week job.  Inspired by one of my favourite bloggers Jane over at Frugal Queen I decided that seeing as I have more time this week to cook from scratch I wouldn't do a weekly shop, but instead would use up what I could in my fridge, freezers and cupboards.  On top of what I already had in the house my lovely boss cleared out her fridge before going away and gave me two carrier bags of food, more than enough to see Mr Bee and myself through the next few days!

Yesterday I went through what I have in stock and came up with a menu plan for the following week..

Breakfast - Every day will be a choice of cereal, muesli, yogurt, fruit, eggs and toast.

Lunch - Mr Bee takes a packed lunch with him to work every day lovingly prepared by me every night.  As I am at home this week I will choose from soup, salads, couscous, tinned fish and leftovers.

Dinner - Below is this week's menu based around what we have in the house.

Sunday - Baked Potatoes, Tuna Mayonnaise and Salad

Monday - Chicken Casserole, Mashed Swede with Harissa and Wilted Spinach

Tuesday - Slow Cooked Pulled Pork, Corn on the Cob and Homemade Coleslaw

Wednesday - Lasagne and Salad

Thursday - Mexican Chicken, Potato Wedges & Salad

Friday - Chicken Fajitas and Salad

On Friday I will see what we have left in house and will plan food for the weekend accordingly to use up what we have left.  I will also plan next week's menu and do an internet shop.
